ABOUT THE COFFEE
This Sumatra has nothing in common with the heavy, earthy profiles Indonesia was once famous for. It is wild, juicy, and surprisingly elegant.
Natural processing brought out a tremendous amount of sweetness and a character reminiscent of a glass of fine red wine. Ripe banana brings a creamy fruitiness, herbal notes add freshness, and the whole experience is tied together by a pleasant, rummy finish.
This is a coffee that reveals new layers of flavor with every passing minute in the cup.
The beans come from the region surrounding Mount Kerinci – Indonesia's highest volcano. Volcanic soils, a tropical climate, and high-altitude plantations allow the cherries to ripen slowly, acquiring an exceptional concentration of flavor.
This micro-lot is produced by farmers associated with the Camintoran Cooperative. The S-Lini and Caturra varieties underwent natural processing and were subsequently hand-sorted, allowing the coffee to maintain extraordinary clarity and a distinct, fruity character.
BREWING RECOMMENDATION:
6.5 g / 100 ml, Drip V60 02, water temp.: 91°C, 24 clicks, brew time: 3 - 4 min / 600 ml.
