ABOUT THE COFFEE
Behind this lot stands Alexandre S. S. C. Cambraia from Fazenda Mundo Novo in the Campo das Vertentes region of Brazil. He is a producer from a family-run, multi-generational coffee plantation who develops the farm with a high awareness of quality and respect for the terroir. Fazenda Mundo Novo is not just a random address on the map, but a place with a clearly established work standard.
Although the farm's name is Mundo Novo (also the name of a botanical variety), the variety of this specific lot is Yellow Catucaí. It is valued for its sweetness, good structure, and a clean, organized sensory profile.
This is a natural process managed with great control. The cherries were hand-picked at the optimal moment of ripeness and then spread in a thin layer on the patio that same day to begin drying. After several days, the coffee was moved to a dryer, where it finished drying slowly at a temperature of 40–45°C, which allowed for the preservation of profile clarity and good flavor intensity.
RECIPE

Ratio: 60 g of coffee per 1 liter of water.

Brewing time: 3:30 minutes.
Method: Pour water over the coffee in 5 equal parts (e.g., 5x 60g) at 30-second intervals.
The water should completely drain through the coffee between pours.
If the water flows too slowly or too quickly, adjust the grind size to coarser/finer.
Remember to use soft, filtered water!
Store in a cold and dry space.
