ABOUT THE COFFEE
A real treat, grown on volcanic soils, of the rare Topazio variety characterized by high sweetness, which, combined with anaerobic fermentation, offers a profile of yellow fruits and a syrupy texture.
ROASTER'S OPINION
A item both for those who enjoy safe, classic flavors, and for those looking for something unusual and wild! The characteristic Brazilian motif of "nut and chocolate" is present here, but it doesn't take center stage. The body of white tea, plus high sweetness similar to mango. The process itself does not consist—as one might assume—of adding cooled volcanic lava to the fermentation tank. Ripe cherries are gathered into mounds resembling the shape of a volcano, allowing for more intense fermentation "inside" the pile. After some time, level it, comb it, and shape the mound again.
