LIBERICA
Can coffee really taste like this? Well, yes it can, and entirely naturally. Liberica is a rare coffee species – it accounts for just 1% of global coffee bean production. This specific bean was created through a collaboration between 96B – a café and roastery from Saigon – and five farming families from Huong Phung. Thanks to a careful production process, beans that were once sold as "pseudo-Arabica" have today achieved the status of extraordinary microlots.
ABOUT THE PROCESSING
The processing of this specific lot began with anaerobic fermentation with the addition of Pichia yeast and lactic acid bacteria. The former, well-known in the wine industry (e.g., in Rieslings), boost fruit aromas and create a somewhat "sparkling" impression in the flavor profile. In turn, the lactic acid bacteria smooth out the acidity, creating a slightly yogurt-like body mouthfeel.
ROASTER'S OPINION
This coffee reminds us of Middle Eastern sweets. It is sweet, fruity, with subtle spicy notes. It is a pleasantly clean coffee, yet so different from anything you know that you will not regret this encounter.
