ABOUT THE COFFEE
Rwanda Dorman Coproca is a natural-processed Red Bourbon that is closer in its sensory profile to washed coffees than to typical naturals — especially after the decaffeination process. Notes of apple and lemon zest appear in the aroma, complemented by delicate milk chocolate. The taste is dominated by tea-like accents, accompanied by milk chocolate and citrus zest.
It is a light and tea-like coffee, with low body and low acidity. Cherries arrive at the Dorman Coproca washing station from just over 600 local farmers. The beans come from the Red Bourbon variety grown at an altitude of 1,830–1,950 m a.s.l.
ROASTER'S OPINION
This Red Bourbon is a coffee subjected to natural processing and then to a decaffeination process, which subtly influenced its sensory profile by gently softening its intensity.
In the aroma, notes of tea and lemon zest come to the forefront. As the coffee cools down slightly, a pleasant association with melted milk chocolate additionally emerges. On the palate, we find mostly tea accents, accompanied by notes of apple and milk chocolate.
The coffee is distinctly sweet, with acidity somewhat muted by the decaffeination process. It has a low, light, and tea-like body, making it remain very delicate in perception. The whole creates a light, sweetish, and fruity profile, complemented by subtle acidity and delicate chocolate accents.
